Hanukkah (or Chanukah) is the eight-day Jewish festival of light that starts on the eve of the 25th of the Jewish month of Kislev and celebrates the triumph of light over darkness, spirit over material.
The history of the holiday dates back to over 2000 years ago when the Land of Israel came under the rule of the Greek emperor Antiochus, who outlawed the study of Torah and defiled the Holy Temple in Jerusalem with Greek idols. But a small group of Jews miraculously managed to defeat the strong enemy and regained the Holy Temple. But when they tried to light the Temple’s candelabrum they found out that the Greeks polluted all their oil. There was some pure oil left enough for only one night and it would take eight days to get new oil. But a miracle happened and the remaining oil lasted for eight days instead of one and that’s when the Hanukkah was established.
To commemorate those wonders on each Hanukkah Jewish people eat oily foods and light a menorah candelabrum (also known as a chanukiah) on each of the eight nights of Hanukkah starting this year on November 27, 2013.
Because of the great significance of oil in the story of the Hanukkah miracle, oily foods reflecting the meaning of the holiday became traditional. Among the most popular Hanukkah dishes are latkes (fried potato pancakes), sufganiot (deep-fried doughnuts with jelly), dairy products and cheese.
