Gluten-Free Chocolate Cake Recipe for Beginners - add fruit if desired
Instructions
  1. Grease 8-inch round cake pan and preheat oven to 350°F (180°C).
  2. In a large bowl, mix sugar, flour, cocoa, baking powder, baking soda, and salt until there are no lumps.
  3. Add eggs, milk, oil, and vanilla. Beat with a mixer on medium speed for at least 5 minutes (Remember, we need to create air pockets for fluffiness).
  4. Stir in boiling water (This step will enhance the chocolate flavor of the cake).
  5. Spoon batter evenly into cake pan. Bake in center of oven for 35 to 38 minutes, or right before a toothpick inserted in the cake comes out just a little moist. If you wait until toothpick comes out dry, the cake won’t be moist enough.
  6. Remove from oven and let cool before removing from the pan.
  7. For frosting: beat butter and vanilla until smooth and creamy in a medium bowl. Add cocoa powder and beat until combined. Gradually add powdered sugar then slowly beat in 1/4 cup milk or substitute. If needed, add more milk to obtain desired consistency.
  8. Frost the cake and enjoy for up to a week stored in the fridge.
